How to: Cook Egg and Tomato Bake!

Todays recipe is perfect if you don't have much time to cook and want a quick meal. This will take less than 30 minutes including preparation and cooking time. It's ideal for lunch, although you can eat any time of the day.

So lets get started!

You will need:

(Based on serving for 3 people)

* 1 tablespoon cooking oil
* 1.5-2 cans of tinned plum or chopped tomatoes
* 2 red onions
* 2 garlic cloves
* salt (to taste)
* chopped fresh corriander
* 1 teaspoon of ground cummin powder
* 2-3 Peppercorns
* Black seeds (nigella seeds-optional)
* 1 teaspoon red chilli powder
* Eggs
* Baby spinach
* Cheese (I'm using cheddar)
* Toast or bread to serve

First heat the oil in a pan and add the onions. Add a little salt to help the onions to dissolve. Once the onions are softened add garlic and cook for 1 minute. Add the tomatoes and let cook for further 2 minutes. Add the black seeds, peppercorns, ground cummin powder and salt to taste and cook for a few minutes on medium heat. Sprinkle in chopped corriander and cook for 1 minute there after the mixture is complete.

Next you need to plate up the mixture into small bowls. Each bowl will serve one person. First spoon in some of the tomato mixture and then crack 1-2 eggs. Add some baby spinach on top and grated cheddar cheese (or any other cheese).

Finally heat the mixture in the grill for around 10 minutes, or until the eggs are fully cooked and the cheese has melted. Serve with toast or bread.

Accessories Hanger for Scarves/Hijabs and Jewellery

I'm obsessed with accessories so I'm always on the look out for ways to store them. Whilst in Primark I noticed this accessories hanger which I think it a great idea! thought I would share this with others that are on the look out for storage ideas. It has 11 hooks which is generous for the price of £2. You can hang in your wardrobe or on a nail on the wall.

Outfit of the Day: Whip your hat back and forth

Excuse the title I just couldn't help myself!

Today was a freezing day of about 2 degrees Celsius- perfect for wearing my winter hijab and bobble hat! (One of the joys of living in a cold country). Some girls love shopping for shoes and others for jewellery. I'm a girl that's kinda obsessed with hats and of course hijabs lol. I have a few other hats which I will show in future OOTD.

There are a mix of colours in the overall outfit but I think it works well together and showcases my style. I have layered with a few tops and finished off with a chunky cardigan. Black is a safe colour for me but I've also incorporated browns and added a fusion of colours with the hijab. I won't bother explaining where I purchased the outfit from as I'm sure you've seen me mention in previous blog posts!

Hmm I think I dropped a £5 note...

What I cooked today-Chicken Curry

So this is another food post and this time its something that I cooked up! i decided to make chicken curry today and as I had a green pepper and courgette lying around (as you do) I decided to add these to it. I made white rice separately using basmati rice. I will be making a YouTube video showing how I make my rice, as many foodie addicts have requested it, so of course I'm more than happy to oblige :)

My delicious food at D'Gaf!

Yesterday I met up with some bloggers Hommes de Femmes, Frooti Beauty, Chocoholic Hijabi, Pyari Beauty and Muslimah Beauty for some delicious food and a catch up.

I've never been to D'Gaf before although I have heard of it. It's in a building which was a former pub in Stratford. The setting was okay, but of course I was more interested in the food. So after much deliberation of what to eat, I finally chose the peri peri chicken burger with chips. The burger had a sweet sauce which wasn't to my taste so I just added some ketchup! I'm in love with how they've presented the chips in a little fryer/drainer...haha don't know what its called but it looks cute.

The menu had other delicious dishes such as Moroccan tagine, risotto and lamb curry. They also had mocktails for those that love a little 'halal in the city'. I did see a sign that mentioned they have women's nights so if you like a good girls night out it may be perfect place for you. They had a section outside on the roof top that looked cosy, although it was too cold to sit outside I can imagine it would be lovely in the Summer. One thing which we all found funny was the choice of music, I think the establishment was trying very hard to be urban and hip so there was old skool music playing such as Blackstreet which I love, and Dre, Snoop Dogg, which would have been fine but they had chosen the uncut versions....

I didn't take any other photos of the dishes everyone else had as I left my camera at home and as you can tell my camera on my phone is pretty rubbish. However check out the other blogs for photos of the food, and of course just check them out because their blogs are amazing!

My henna/Mendhi with Glitter!

So I recently had mendhi applied to my hand and as I have never tried it I thought I would get glitter added to the design. It looked fabulous but didn't last long (some had rubbed off the next day and most had come off after 2-3 days) But for a day it is not too bad and its great for a special occasion. I had blue and silver to match my outfit.

The glitter has stayed on the next day even though I continuously wash my wash throughout the day. After three days most of the glitter has come off apart from around my wrist.

Tips to get the best out of your henna
  • Leave the mendhi on for as long as possible. Once it starts to peel off, wash and apply oil or vix onto your hand. You may also wrap cling film around to keep in the heat. This will help the colour to darken as it heats up
  • Do not use black henna as you are more likely to gain an allergic reaction from it. If in doubt apply a test patch before use
  • The best time to apply henna is 1-2 days before a special event
  • Depending on the quality of henna, it should last for around a week

How to cook tasty mince meat and peppers

So this is a dish which I have learnt from my mother, and as I love it so much I thought I would share with you.



Just a note that when I cook I rarely use measurements- I prefer to guess and add according to taste (or in my case smell) Yes I smell my food to see whether it needs more spice, lol don't ask why but it works for me.

So the measurements that I will provide are approximate, but remember you can adjust according to taste.

This will feed approx 3-4 people
  • 500g lamb mince meat
  • Red and green peppers
  • garlic cloves or powder (or can use both)
  • Ginger (fresh or powder) approx 3 cloves/1 teaspoon
  • Black Seeds/Nigella Seeds
  • Garam Masala
  • Salt
  • Coriander
  • Chilli powder and fresh chillies
  • Curry Powder
  • 1 large onion
  • Oil
  • Tomatoes
So first heat the oil (approx 1 teaspoon) then add the chopped onion and cook for 3 minutes. Add the mince meat and cook for further 3 minutes then add the garlic and ginger, salt and all the spices. After 10 minutes add the peppers and cook until they soften. The mince meat should be cooked until brown (approx 30 minutes in total) Once cooked the onions should have softened and dissolved with the meat.

So that's how I make mince meat. I will use the same technique to make the mince for shepherds pie, although I will add potatoes instead of the peppers.

I like to have this with basmati rice and with a tasty salad. I add Cheddar cheese, juice of a lemon and mint sauce to my salad. This meal will provide protein, carbohydrates and nutrients.
